My name is John Quiring and I founded Le Quartier Baking Company, a Montreal-style/artisan bakery, in Lincoln, NE. I was trained as a baker in Montreal and Paris for just over 3 and a half years. I came back to Nebraska to start my own bakery and be close to my family in March 2006. I worked out of a sublet commercial kitchen for the first 9 months and in December 2006 I opened my first retail store. Since then my brother, Seth, has joined the bakery and we have opened up a second Lincoln location and well on our way to opening our first location in Omaha, NE.
What I want to do with this blog is to let people know what is going on at our bakery. We are going through a lot of changes right now and I'd like to let people know what new things are on the horizon.
I also want to use this as my online bakery/bread diary. I've come a long way from my early days in Montreal and life is still changing a lot for me. When I'm old and with even less hair I'd like to look back see my entire journey.
I'd also like to add that not all my posts will be about the bakery. I have other food projects that I want to talk about. This way if nothing exciting is going on with bakery I can still post something that I think is interesting.
